The trip to Eau Claire went really well. Finn's tolerance for car trips has improved. We got here yesterday, and our motel is across the street from a restaruant with (reputedly) the best Chinese food and best sushi in town. It puzzles me that these can be found at the same establishment, but you take what you can get in Wisconsin. We picked up dinner from there last night and I had some very craveable and delicious tofu and veggies. Finn tried and loved the tofu.
Today we will tour the city with our friend Pete and go to a few open houses and other showings.
The weather is BEAUTIFUL. I hope I brought enough short-sleeved shirts.

It is finally here! It just 6 short hours, i will be getting married. I soaked for 20 minutes in the Jacuzzi this morning and then shaved while Jen is getting her hair done. I am now going to get ready and head to the church in a little bit and get a bite to eat and get into my tux.

I had my wisdom teeth removed to day, about 12 hours ago in fact) I'm happy that I feel as well as I do. But at least until tomorrow I'm on an all liquids diet and then an all softy diet for four days, which means that my favorite foods (The kind you chew) are out of the question. Does anyone have any ideas about what I could fix, or ways to modify recipes to make them more friendly to my hurt mouth?
Just as a not I have a ton of soup, mashed potatoes (from a box only because the consistency is perfect from the start) pudding, jello, broth, boxed mac & cheese and of course meal replacement drinks. It all sounds good, right? Any help is greatly appreciated.

Hi, all. My wife and I are looking for someone to take care of our son while she's in class (not full days 6 hrs will likely be max time) this coming Fall (and Spring, for that matter). We're not interested in traditional day-care - just in-home situations. Stay-at-home (grand)parents, etc. willing to look after one more.
He'll be a year old in August.
Something of note: we are a vegetarian family, and while you don't have to be vegetarian to take care of him, you just have to respect our standpoint and not "sneak" him meat and such.

I'm kinda wanting to make pot roast this weekend, and I find AB doesn't have one listed on Good Eats Fan Page. There's a beef stew, but that's not quite what I'm looking for.

Last full day in Montreal. Heading out tomorrow morning after breakfast
with Rachel. Good trip. Really good trip. Long drive home, so I can
ponder if I really want a shiny new Ford Focus for $14k (loaded - the
dealership knocked like $3k off the price after taking Dad's UAW discount)
at <5% interest. The Vue is getting pretty raggedy, but the ~$280/month car
payment halves my liquid income and slows my debt reduction until I get
promoted in October. That being said, the fuel economy is better, it'll fit
better in Montreal, and its ~$10k cheaper than a Prius. Well, tis breakfast
time.

Well, that kind of puts it into perspective, doesn't it? Final? Well, I mean, that is what they got today, their final. It was funny to be on the "other side of the table", to see their trepidation, to hear all of the "I studied for hours" statements, the bargaining, the worry, the confidence. Wow.
I will miss this class. The second day I walked in the class was bulging at the seams, 37 individuals. 3 of them couldn't do it because it was too late. Three additional had jobs that conflicted. Two just didn't like my method of teaching. Meaning I ended the entire scenario with 29 people, and I appreciated and respected every single one of them.
Professor. What a title. I would never have thought, as I sat working on my first bachelors, that I would be on the other side of the table. There are so many things about the last three years that amaze me. Another bachelor's degree. A degree in Spanish...wow...where'd that come from. Almost done a Master's degree. And boy do I mean "almost". I mean, c'mon, the thing is done in 6 months. I *even* know the day I graduate. My mom is already excited, and truth? So am I. And the best of the best...wow...I am applying for PhD programs. PhD!!! Oh geez.
And people call me "professor". Yeesh.
It would be a sadder event, my last day with my class, if it weren't for the fact that the chair of my dept already asked me about teaching next semester. So, yeah, one more time. And then, the semester after, a four year school wants me. Wow. This is amazing. Who would have thought?
So, being a prof? Awesome. Totally.
Sigh.

I've been meaning to photograph this wall since we moved to this area two years ago. I finally remembered to stop yesterday. I only got this one shot that I liked.
This morning I am leaving Hancock with my mom to go look at houses in Eau Claire. I'm nervous about traveling with Finn - it hasn't been easy in the past. I'm not excited about hours in the car seat, or taking him to restaurants, or navigating motel sleeping arrangements. But I know this trip is a Good Thing.
Not sure if I will have computer access while I am gone. I will be back by Tuesday.

alright, I want to thank EVERYONE for the information, the mac and cheese has been done and here's the final recipe
1/2 lb of chicken breast cutlets
1lb of elbow macaroni
1/2 lb of cauliflower
8 oz of shredded mozzarella
8 oz of shredded cheddar
3 tbs of butter
3 tbs of all purpose flower
3 cups of milk
paprika and some onion powder for taste
now I will not pretend to be a chef, I will simply relay the order of events in which i did them. At the end I will list out the caveats, and the feedback from my family.
1. I cut the chicken breasts into strips and smaller sections, and put them in a hi heat sauce pan. I cooked the pieces till they were done. I did them in portions to keep the heat up and to make sure not to over cook them. They were going to be cooked again in the oven and i didn't want them getting wrung out. When the pieces were done, I threw the cauliflower in and warmed it up. I was trying to soften it and get a little flavor too. When that was done, I put it in a bowl with a paper tower to dry it off.
2. I cooked the macaroni, boiled water, ya know the drill. Put it to side in another bowl, covered to make sure they wouldn't dry out.
3. made the roux. 3 tbs spoons butter, and 3 tbs spoons of ap flower. Cooked the butter till all the water was out, incorporated the flower, whisked it till it was blond in color. Added the three cups of milk. Make sure you whisk the whole time. Bring to an almost boil. Should thicken properly. Incorporate 3/4 of the cheeses you wish to use. This meant my mozzarella and cheddar. The sauce should be extremely thick and creamy. Tasty too.
4. Added my paprika and onion powder. I can't say how much I used, but I sprinkled about a teaspoon of each. I'm always worried about over spicing.
5. Mixed the macaroni with the chicken and cauliflower, and then put that mixture into the sauce pan with the cheese sauce. Then folded it all together. Once properly combined, put it in a casserole dish.
6. Center of a 375 degree oven for half an hour topped with bread crumbs and some of the left over cheese. Rest for 5 minutes. Yields about 6 to 7 servings. maybe more depending on your intended use for this dish. :)
Caveats:
I probably didn't whisk enough when adding the milk. The flower butter roux did not set up correctly and the mixture didn't thicken enough before I added the cheese. After I added the cheese it was properly thick.
The result was a lot creamier than the result I was intending. It wasn't a cuttable casserole.
Probably didn't need the amounts that I had, but then again, i could have used more sauce and had it would have incorporated all the macaroni, chicken and cauliflower. Then I would have needed a larger casserole dish.
Comments:
Parents said I should have steamed the cauliflower better, made it more tender and softer to chew. Salt and pepper to taste as well. They added their own. But it was good, and they were happy.
